While there are some games like Arx Fatalis that could categorically be called RPGs, RPGs usually have multiple scripted paths that each have their own conclusion and consequence whereas immersive sims concern themselves with having multiple unscripted paths with a single objective. In System Shock, that's to stop SHODAN, in Thief, it's to steal shit, and Deus Ex, to stop Bob Page.
Additionally, the way handling the same thing is usually different. In RPGs, you usually have a general option and occasionally a relevant skill that can be applied. Immersive sims do not have skill checks that would restrict you from pursuing your task in the way you want to.
rpgs allow for agency by simulating it w/ dice rolls
immersive sims have you actually doing what would otherwise be done via dice roll
and to allow this theres logic+ systems in the enviroment that you can take advantage of to progress in your own way. htakx

More freedom than different playstyles, but not enough freedom it enters Sim territory.
Usually mechanics under the hood that aren't tied to leveling Stata or perks.
