I've had the same experience with several other games. The fact that you've already tried it three or four times suggests it's something you can't give up. Keep trying and once it eventually clicks, you'll fall in love with it more than just about any other game.
Ys is like Zelda but with levels and grinding. Each game is its own thing, so the order doesn't really matter. In the fact the upcoming X is set between 2 and 3 timeline wise as they wanted to age down the MC to appeal to the younger Switch audience. Anyhow, 8 has its own self-contained lore and setting.
In the immediate future, Eiyuden looks interesting and I'm cautiously looking forward to SMT5's new story. Besides that I guess I'll pick up FF7 Rebirth once it comes to PC and I'm looking forward to Metaphor. Kuro 2, DQ3HD, DQ12 and maybe Decapolice if it's good are also interesting but they don't have release windows.

Is it okay to skip to VIII?

Filtered how/why, exactly? Either way, you can jump into VIII if you want Few Ys games directly build off of each other in the sense you need to have played one game to be able to follow the plot of another. (Notable exceptions being I and II).
It's not that VIII is a spinoff, but it's not part of a larger narrative that has any prerequisites needed to follow along. Most of the games are like that. Aside from references, you usually don't miss much.
I had apprehensions about it before playing, but it clicked after a while. No point forcing it if you tried the game but didn't like it, though.
Give VIII and/or Origin a try, then. The series has had different gameplay styles over the years and both of those are each representative of an "era", so to speak (same for I). If neither click, the series probably isn't for you.

Monochrome Mobius 2 - excited to finally leave Yamato behind (we already spent two hundred hours there! Let it go) and discover the new, dying fantasy India of Arva Shulan. I hope Vurai joins the mission and is playable and we get to see how his beef with Oshtor got started.
Kai no Kiseki - Excited to see Class VII fly across the border with their mechs, excited to see Erebonia vs Calvard the redux and see Gramhardt get what's coming to him. Hope the story finally fricking ends because it has been dragging out too much.

There will be two Kai games, a bridge game (possibly two) about the far East and then a five part finale arc. Kiseki will end circa 2035.
Emerald Beyond, Eiyuuden and maybe SMTVV, there's also Metal Saga but it's too far away.
Both Emerald Beyond and Eiyuuden have already proven their worth, still unsure about VV though, need more info on what exactly they're adding and changing, if they're fixing the story and some gameplay elements I might actually consider paying for it and emulating the switch version because there's no way in hell I'm letting Fatlus put Denuvo on my PC, frick them and SEGA.

Except 1-2 it does not matter what order you play the Ys games in. The vast majority are entirely self-contained.
I think 1/2/Origins/Six/Seven should be locked with the others in whatever order you want.
But playing Celceta after 8-10 would be a chore
Yeah but origin is also easy to jump into tbh.
Felgana is another easy one to start with.

The bump combat is just not engaging to me and ultimately turns me off.

Kuro's battle system is one of the top five battle systems in any jrpg series. It is extremely good.
