I was more put off by the excessive reading and slowly walking everywhere than the combat
Played this shit for the first time a few months ago. Missing was never an issue because I wasn't moronic and chose a race with a bonus to the weapon type I wanted to use and marked it as a major skill. That gave me enough points in it to reliably hit everything I encountered in the first few hours, which isn't a bad deal for a game you can break within the first 5 minutes.
You are why games are shit now
Increase Agility and weapon skills. Use potions/spells for slower Fatigue
charge your attacks
check you stamina
actually use the weapon that your character is good at (60+ skill should be fine to hit 90% of the times if you do first 2 steps)

There isn’t much required learning to enjoy morrowind but admittedly there is a little, watch a YouTube video or something and start a new character once you know the basics.
Remember it’s an rpg. If your character isn’t skilled with daggers then you’re not going to be able to kill anything with the dagger you pulled out of that table. There’s a merchant right across from where you start in Seyda Neen, go buy a weapon you’re skilled with, fricking outlander

I wish RPGs did more with the idea of transferable skills. Fighting with a mace IRL is actually pretty similar to fighting with an axe. And even for different types of weapons you still learn a lot about the general principles of fighting. (gauging distance, training your reflexes, etc.) Outer worlds kinda did something lile this but I'd more imagine it as putting 10 points in maces also gives you 7 in axe 4 in long blade 1 in daggers, for example.
Morrowind has never been a bad video game.
Just played through it recently. It was super fun.
The whole Vivec loosing his powers, shit was ok. But the sidequest were top notch. Dungeons, beautiful world, swamp mood etc. Great stuff
Also i forgot to mention i Played it in ESO Kappa
It's a product of the time when games expected you to read the manual. Honestly 95% of the challenge in this game is character creation. If you do it right the games actually very easy. If you can't be bothered just turn the difficulty all the way down and play that way. Combat doesn't feel rewarding to master in this game outside of exploits anyway.

pretty funny I can punch ghosts but my sword swings go through them (long blade is at <40)
Imperials and personality are really underrated.
They can really get rich quick, especially against high elves (magicka weakness).
Seyda neen's 1 merchant is a good way to get money in the beginning, so is the armorer from pelagiad.

You can manage a whole mob of things if you get their stamina down to zero and floor them.
If I could some how record the game and convert it to webm, I would show you.
just install next generation combat if you hate chance-based attacks so much.
also the code patch and MGE XE. and the read aloud mod if you're an attention-deficient turbo-zoomer who can't read dialogue by yourself.
the above will fix all ways in which the game has significantly aged.
