Because the Remake trilogy is a sequel to the PS1 game. It was never meant to be an actual remake.

It is a sequel with remake elements (the plot of the original is repeating with opportunity for things to happen differently). We don't know the whole scope at this point.
Expect Remake Part 3 to essentially be mostly new material. Something will happen in Part 2 that allows for most of VII to be "remade" but the story then breaks from the original path to a new direction part 3 will cover.
The team behind this project are geniuses and heroes. This is the spirit of the JRPG.
Rebuild is the cause of this trend but that's because it was actually good and treated its main character like a victim of the circumstances at hand, instead of an onahole for the villain's moustache twirling shenanigans
It also never pretended it was a remake since you have seas of blood in the original and Asuka dying in the second movie

People would be fricking pissed if Sephiroth wins and the entire planet and cast are dead. So yes, it would take balls to have the player go through three entire games only to fail and lose.
Aerith being dead guarantees Sephiroth loses. For Sephiroth to win Aerith would have to lose. It would be a giant frick you to Aerith simps only for her to live temporarily and then die when they entire planet gets ass blasted. You would be basically saying to everyone who wanted her to live "this is your fault, this is the future you chose."
Never going to happen and people would be okay with it because remake sucks.
