I don't know what are you doing but I played it on linux at some Nextfest event, it's deck verified and I never heard of any game you can't download despite it being compatible or not with the OS.

most games don't have demos, so I can't say i've tried it a lot. but yeah any demo that is Windows-only does that.

Partners are super easy to grind, you get one per 5 floors or so.
The bosses of each floor seem to drop them semi-regularly.
