Is there a trick to this besides continue to pass on destiny knot to the one with the highest IV's, and keep breeding with the opposite gender until another higher IV comes along? At this point I'm just settling for Best Sp.Atk and Speed.
Why do you need perfect IVs?

So should I settle with one that has relatively-superior potential and one Best stat in Sp.attack?
I mean, you can if you want? It's definitely not something you're supposed to do, and frankly it's a pretty miserable process. If you're enjoying yourself though then go nuts.

for playing through the games casually? no, not at all
that stuff is only important if you're playing competitively online
It's almost impossible to get two perfect IV mons if you are breeding with unhacked mons. That's just how RNG works. You need to breed (31 in the power of 6) times in order to have 50% chance of a perfect IV pokemon. My advice is, ask for some help from injectors to trade you a perfect IV ditto.
What game are you playing? If its gen 8 or 9 just find a raid for a mon that can breed with horsea. And do this until you have enough mons that have perfect IVs in the relevant stats. The higher difficulty the better. Then breed until your IVs for your relevant starts are perfect. Use the destiny know to carry them over. If it's anything other than those two games you shouldn't bother for IVs because all they're really for is pvp.
I'm playing ultra moon. Its hard to get horseas because everything on the GTS is hacked and freezes my game. So far my best Horsea has Very good SpAtk, Pretty good SpDef, decent speed, Pretty good defense, Best attack, pretty good HP. Breeding it with a similar female, both are relatively superior potential. I will stop when I get a male with Best Sp.Atack at this point.

SOS chain Bagons until 30 (maybe there's an easier Pokemon to do it with), catch the next male that spawns, should have a least 4 perfect IVs.

destiny knot only passes down 5 random ivs picked across both parents randomly.
even if both parents have perfect ivs only 5 perfect ivs get passed down, and the last stat is a random number between 0-31.
Unless you're planning to play on actual tourneys like VGC or something, the only stat that needs to be perfect is speed. All the other ones can be just near perfect and it'll mostly be fine for stuff like casual ladders or battle tower
