For me, it's these three things: >Just Defend >Break Moves >Guard Cancels
Just Defend works the same as it does in a lot of games. Perfectly time you're block and you recover faster/nullify chip. Break Moves are special moves you can cancel on hit/block and often serve as launchers/juggles. Guard Canceling might be my favorite though. When you successfully Just Defend something, you can input the motions for a special move or super (but not normals) and punish most attacks. Most punishes consist of doing all three of these things, (Just Defend -> Guard Cancel -> Break Move -> cancel Break Move to get juggle -> super.)
This flies in the face of SF3, but I actually like guard canceling is limited to special and super moves. Keeps things easy to remember.
He means sc2 is well loved by tendies but for many it was the last sc they ever played because bamco thought it would be a good choice to kill the ip and make it exclusive to PS2 when their largest player base was on the GC. He's probably right that its legacy is inflated by the tendie audience who only ever touched 2.
I think they're just more interesting in the long run so people talk about them far longer. That doesn't always mean they are better games, but modern games are designed with a lot of intent and anything deemed incorrect gets patched out. If any old game stuck around it means a player base organically grew as people liked what they found as they slowly pushed the game's limits. There's a middle ground I wish games would hit but that just doesn't seem to be the direction of the genre.
