You never ever need to grind in Souls games. You can just play the game normally. You can even play the games at soul level 1, because most of your damage comes from weapon level (+ damage buffs you can stack on top).

"Leveling up" is a gay mechanic and has been a travesty for games since even before video games, and it has only gotten worse when "RPG elements" started invading other genres.
