t1, kazuya made a deal with the devil to get his revenge on his dad heihachi for throwing him off a cliff. once he got his revenge he took over his dad's company and was a massive butthole to everyone. t2, jun kazama thought she could fix him. she was wrong but she still ended up having his baby, who is jin. meanwhile, heihachi one uped his son by beating him, throwing him into a volcano, and reclaiming his company. kazuya got better though, but he had to be absent for one game first. t3, jin inherited the devil's power and after losing his mother to a chad aztec god and being betrayed by heihachi, made it his mission in life to end his family on his father's side because he concluded they're a bunch of buttholes. t4, devil is retconned into being a genetic thing and not really being the actual devil (though devil himself mocks the scientific explanation to his existence, so take that as you will. but the devil shit from 4 and onward gets retconned with something every game.) anyway jin nearly kills both kazuya and heihachi but is stopped by a vision of his mother and he leaves. t5 happens, jinpachi, heihachi's father, is revived from the dead by a demon/evil spirit and starts a new tournament after taking control of the family business because heihachi took a nuke to the face and was presumed dead (he got better). jin defeats jinpachi and takes control of the business, meanwhile kazuya takes over a different rival business. jin for t6 decides to go heel and start world war 3 so he can awaken an ancient demon he can punch in the face and hopefully kill them both in the process. he failed to do either. jin then decides to sleep for all of 7's story while heihachi takes back the family business for the millionth time and tries to settle the score once and for all with kazuya. kazuya throws heihachi into the volcano this time, *probably* killing him for good. also the devil shit comes from kazuya's mom's bloodline. t8, jin woke up and wants to frick up dad.

Heihachi had imprisoned his father Jinpachi under Honmaru (family temple), chained from all his limbs to the rock walls and holding a giant boulder above his head
He survived alive for decades like that without any food or water, but was eventually about to die
Just as he was near death, his defenses became weak enough that an evil spirit that was haunting the underground dungeon possessed him, and the now possessed Jinpachi easily broke the chains and climbed out
Also, when the Jack nuke exploded in front of Heihachi, it sent him flying for several kilometers and he fell into an open grave in a graveyard, woke up a couple weeks later and climbed out

Jinpachi had been possessed by the evil spirit for a while already by the time the Kazuya and Heihachi fight against Jacks happened in Honmaru
Even with the evil spirit, Jinpachi was still unable to lift away the giant boulder he was made to hold above his head
The explosion caused by the Jacks destroyed all the obstacles above Jinpachi including the boulder he was holding, and that is how he got free, we see him in the intro of T5 in the burning ruins of Honmaru, breaking the chains from his arms

Tekken protags/antags are typically all about going whatever lengths they need to go to get what it is they're after, often times either fricking it up or finding a better path to doing so - only to go back to fighting the next game because of how determined they remain to achieve more or fix their own lives. Heihachi, Kazuya and Jin are just extreme examples of that which got escalated to ridiculous levels as time went on, but the point being they started off as potentially half-decent people whose life events turned them into adopting evil methods to defeating their woes. Kazuya was doomed as a kid from both his own parents wanting him dead because he carries each other's demons within him and now seeks his own family's deaths for more power, Heihachi himself started as a loving father before his wife tricked him and forced his hand, pushing him into the multi-billion dollar crime lord he was prophesized to become while trying to clean the bloodline mess he started up, and even Jin goes as far as starting a war with his father just to be the one to break the cycle despite nearly destroying the world in the process, probably in fear of becoming something even worse.

Unknown isn't canon, at least not right now. Tag1 was going to be canon and Unknown was going to be Jun's sister, but that all got dropped. He then sees the helm fall off and realizes he just killed his own father, which causes him to go completely insane from the guilt and horror. Then he hears about Soul Edge and sets out on a quest to retrieve it so he can use it to resurrect his father.
