The rerelease was to make it playable to game journos who cant unto stealth and kept getting caught by enemies they couldn't see. 3rd person camera is both too close but not far away enough, its genuinely bad and its actually game breaking. People didnt understand that each individual area in these games are like shoe box dioramas and changing the camera completely fricks it up.

Keeping this in mind, some people shit on the original camera and only play in 3rd. So you can say with all confidence that those people never actually played mgs3.

Traditional view will give you a better idea of Snake's immediate surroundings divested of his perspective, TPS view will show you what's ahead of Snake, and both of these are actually fairly relevant in the game because enemies and particularly The End will absolutely still spot you from outside the space you can see them in traditional view and the radar in this game is not the same as it used to be.
In original Snake Eater, I was very frequently stopping to enter first person just to see if I am navigating into a shitshow. That's the gameplay you are dodging, you still do in fact check ahead of you in a slower, more tedius way if you abstain from the new viewpoint.

You should play it on PS2 first imo. You don’t lose too much by playing the 360 or PS3 versions first but I still think it plays best on PS2. It at least makes the aesthetics of the game that much more impressive.
the rotational camera is a huge huge improvement. I had wished they had implimented it in 2 as well. Just being able to see forward is such a game changer in these games.

It's a fun seeing what the current area looks from a different perspective, but the novelty wears off in like 5 minutes. I've never had issues with the top down camera, or with stealth, guards off screen, using guns. The game provides me with all the tools to play the game perfectly and without issues. If MGS games after 3 retained the top down cam, it would've had an impact on the level design, and for the better. Third person was a mistake for mgs and it takes away from the gameplay.
I also think mgs exceeds with indoor environments, that's why groznyj grad is the best place in the game, but at least mgs3's geometry makes the jungle work like it's an indoor environment with an outdoor coat of paint, unlike the following games.

There are a lot of rooms and areas with lighting effects that don't look the same with 3rd person cam.
The area where you wake up after The Sorrow fight is a big one I remember. Definitely take a look for yourself.

Off the top of my head, moments like that part in the game where you are ascending a mountain, and especially any moment in the game where you are on Eva’s motorbike (the Shagohad chase for instance) are definitely better with the original camera. The motorbike chases are actually “filmic” looking sequences with changing and dynamic camera angles with the OG camera, while with the Subsistence camera, it kinda just hovers around and doesn’t look anywhere near as interesting. Using the OG camera in indoor settings can make the game more in line with MGS1 and 2 if you wish.
Of course, considering all you need to do is click R3 to change the camera on the fly, simply experimenting in different areas and seeing how you feel about it couldn’t hurt.

I wish I could fully enjoy the cinematography of the bike sections but sadly you have to constantly go into first person mode to kill enemies
