If you start with Master of Orion 2 then the rest of the genre will be ruined for you right away and you won't enjoy any other ones, so might as well save yourself the time and start with it.

Damn son you got filtered hard. It's the best 4x game on the market. Stellaris is only just now starting to catch up, and that's with tons of DLC.
If you're not gonna play it because it's old, there's been a remake called Interstellar Space - Genesis
The game's not too complicated on the economy front and most shit is tooltipped but it's also some of the best in-depth combat you can get in a 4x game.
If you're an absolute beginner, try 10 Min Space Strategy. It's very streamlined and the AI is very forgiving
