I don't see any point in touching the PS2 version at all. Unlike a lot of primitive 3D games, the lower res doesn't do the assets or overall art style any favors. While the remake in the new mode is a lot easier, maybe a bit too easy, the original was overly tedious and unfun to begin with, and the update is simply a lot more playable and enjoyable.
Leifthrasir is perhaps the sole example of a remake being so holistically superior to the original that it renders it pointless. Not only does it completely revamp the gameplay for the better, but it even includes the original without its framerate issues.

How is there still not a fan translation of Kumatanchi? You'd think some autists would feel the need to have the entire Vanillaware catalog in English, and it seems pretty simple.

No they didn't, they went back and re-created it from the original art assets. Just because the game was 512x384 on the PS2 doesn't mean the art was drawn at that resolution.
There's a translation, but it's not integrated into the game as a patch, so you'll have to play the game in Japanese and then follow along in the translation/guide.
Everyone hates on the old one, but outside of the menu system and repeat levels I found the combat to be much better in originally. The thing is that the new game's combat just isn't balanced around any of the old enemies. If you are even half way decent at something like DMC, the whole thing is just a combo exposition against enemies that really truly can't attack back. And the difficulty settings do nothing to change the how aggressive the AI is, it just bloats the HP of easy enemies. Now maybe you really like those kinds of combo exhibition games, so maybe that is appealing in which case go for the new game.
But in the first game you had to balance your stamina, focus on your spacing, use potions, and know when to cut out of your combos to avoid being hit. And blocking actually had a purpose in the original game because as long as you block the attacks, you can get the S rank on that area. Overall the gameplay is just more intentional and strategic in the original, and everything is really balanced around that.
The remake fixed the extremely clunky menu system and it added some unique platforming and other new scenarios that is sorely missing from the original. There is a classic mode included in the remake where you can at least turn on menu and other QoL fixes adn play through the original combat, but it still has the same repeat level design of the original. It's a good middle ground, and probably my favorite way to experience it.
the original game is borderline unplayable because of framerate issues regularly dropping down to sub-10 FPS, maybe emulators fix it I dunno. I wouldn't suggest it though

They apparently had to re-draw all the sprites and backgrounds to be truly HD, didn't just do some lazy work with filters.

Wow! I remember it having awful frame rate since it was pushing PS2 to its limit but I didn't knew it was THAT BAD.
I exaggerate a bit, but I do recall it having a worse framerate than the original Star Fox at times specifically during that fight.

Emulator and PS3 fix it. Still there's not reason not just play the classic mode on Leifthrasir. This isn't some soulless Square Enix remake.
