For the multitude of games which use some sort of color artifacting, you're 100% right. For games that don't, usually arcade ports, S-Video/Component/RGB will provide a better image at the cost of having to manage the setup better.
Hell, if you want to add some old school digital processing, run a composite-blending game (Phantasy Star for the SMS; early enemies have wings with dithering as a blending feature) through a really good VCR with a 3D comb filter, then use the S-Video from the VCR. I've seen it remove composite artifacting with maybe a frame of input buffering. It's kinda silly.
Is there a good, singular box like this with HDMI out? I'm thinking about replacing my plasma but nothing on the market has all the inputs I currently use.

Do you think there's any benefit to having composite cables thicker than most jumper cables, besides how ridiculous all the plastic shit on it is? I've just never noticed a difference with cheap composite cables. Stuff like VGA for sure, though.

Like most of america's technologically backward problems, the reason why it took until HDMI for any serious signal/connector standards to be re-established is that it's a huge country with awful infrastructure and a lot of already established technology that isn't going anywhere until some white collar criminals decide it can benefit them (such as basically the entire media industry pushing for HDMI copy protection).
Nobody bothered with S-Video because like 2/3 of the TVs in the country were still using RF spade connectors, we were lucky when we got composite.

It's extremely easy to mod PAL systems to output 60hz. You can also use RGB Scart cables on NTSC consoles.
