It hasn't really changed much either since the 1.0 and Microsoft adds very little novelty things at a snails pace. The only thing I could say was actually good content(and not just more decorative blocks) was the pillager update and mansions.
Building shit with Ganker when it was nothing but creative and lava would flood the map was peak comfy. I know you are too young to remember that but it's okay.

there are mods to get old world gen back for newer version. Plus you can couple it with nostalgia tweaks to tweak almost all mechanics and get resource packs to make it look and sound like old minecraft
