1 is good. Just extremely short. I beat it in what, 6 hours or something.
Anyone who tells you 1 aged poorly is a moron and 2 didn't age poorly as much as it just wasn't very good to begin with. Just play them in order and maybe skip 2 if you're so inclined, though might as well give it a try anyway and just drop it if you can't stomach it. It's always good to form your own opinions.

you should start with sweet home on the nes and maniac mansion on pc to understand the roots of the horror genre, then appreciate how the genre changed and refined through clock tower in the snes to resident evil 1 to 3. but before moving, you should play both ocarina of time and majors mask, to witness the birth of the z target, this should give you enough perspective to move on to onimusha, and experience the survival horror "skeleton" of the game and how it introduced and created hack and slash characteristics, after that you'll be able to fully appreciate dmc1 for it's action/semi-horror mechanics.
Playing 1 will make you appreciate 3 and 5 more. Not because it's a bad game, but because those games thrive on referencing 1, both from a gameplay and story perspective.
1 is an archaic game but it's not bad.

1 is very different from the rest of the series since it was directed by Kamiya, while the rest by Itsuno, but it's still very good, but you might get filtered by the camera (which isn't a huge deal imo, but people b***h about it all the time). 2 hasn't aged poorly, it was always shit. Try it and if you don't like it (most probably) then just skip it.
Also don't move onto the next game after beating one, replay them at least once on a higher difficulty.

Play 1 to get yourself established and capable of appreciating the future games more. Watch a lore video of 2 on youtube, then play 3, 4 and 5.
1 is good and you should totally still play it. 2 on the other hand was never good but you can take a look at it. It's not offensively unfun until you hit the tank and helicopter section. It also isn't very story relevant so you can just poke your head in to see how it plays and then go to 3.
I just finished playing through the series myself. Don't skip them. Yes 2 is bad but a quick few hour playthrough is all you need for it. Do now skip 1, it still holds up really well.

1 is old, but it handles basically like the other games, you just can do way less stuff in it.

3 is technically a prequel so you can comfortably start there and then if you want to see Dante shenanigans play dmc1 after, but 1 and 2 don't hold up to the rest.
