Ganondorf isn't an avatar. He's an o'nnen, a descendant of Demise in the karmic cycle, much like how most Zeldas are merely descendents of Hylia, who was reborn as the first Zelda.
Ganondorf inherits Demise's place as the Demon King, but he isn't Demise or his avatar. Ganondorf is his own person.

You're wrong. Ganondorf becomes Ganon by using the Triforce, in both OoT, and LttP. Ganondorf uses the Triforce of Power to turn into Ganon at the end of Ocarina of Time, and turns into Blue Pig Ganon after getting the whole thing in LttP.

He still had his memories in LttP and throughout most games in the downfall timeline UNTIL the Oracle games, where the ONLY REASON he lost his mind/memories in the first place was as a result of a botched resurrection. It's also why in Link Between Worlds, he is mindless and just fuses with Yuga.

There is no double or split personality, there is no duality and he isn't schizophrenic. Ganondorf IS Ganon and Ganon IS Ganondorf. There is separate Ganon persona, he is the very same guy all the way through, be it Ganondorf as the Gerudo King or Ganon as the Demon King.

Bowser being the main villain in a Mario game isn't surprising. Bowser being the main villain in a new installment where he doesn't make one in-the-flesh appearance in the trailer, has both his castle and his son under some strange new influence, and the whole game in general being advertised as something different than the usual NSMB formula would be shocking on the basis of a story making what looks the red herring into the true villain.
Even if Bowser really is the main villain with no one behind him pulling the strings, that would be lame as frick and the only thing that could rectify that is if we get an interesting battle with him that involves the wonder seeds and without him becoming a giant for the 20th time.
