It's not saturated enough. Most RPGs are movie games or, worse, book games. WRPGs are all ugly and brown, either totally janky or top-down bugman shit, usually unfun to actually play and obsessed with le deconstruction and sex (ask anyone anything about half these games and the first thing they'll mention is brothels or collecting all the wimminz). JRPGs tend to be either too over-the-top, turn-based or don't actually feel like RPGs at all, they just stole the stats and dice rolls, but there's not an ounce of player agency.
If Elden Ring looked like an old school FF and actually had non-combat solutions to problems, it'd be the perfect RPG.

You're in the overwhelming minority of people who have grown tired of the medieval setting. Problem is that the masses love that shit and it's easy to make stuff with it. Plus it's essential "nerd's paradise" material or whatever it was I read a while ago, which is a huge asset for people who primarily play RPGs (especially CRPGs).
The problem is that other settings are less explored and, because of this, haven't been "figured out" just yet. Space is vast but very difficult to make as "exciting" as what the DnD and Medieval fans are accustomed to (keep in mind these are the groups who are among the biggest investors in isometric, tabletop RPGs in the first place). Post apocalyptic is intentionally barren, but that can also be boring for a setting too. Cyberpunk has a good setting, but it's not the same as embarking on epic quests in the Medieval games.
I agree with you though since I'm bored of Medieval games too and have been bored of it for a long time, but realize you're not close to the majority and nor will you be for a very long time.

More like the average gamer isn't more reluctant to try something different when they are comfortable with the thing they know and have known for years. Would you rather go for the space game with seemingly nothing to do but get into dogfights and "explore" planets with the borderline drab and depressed looking color filter? Or would you play the game where you know what you're getting and you know you already like and are used to: the epic quest to fight the fire breathing dragon that you blast with lightening and fire with your party of humans, elves, demons and shit that you likely get to have sex with. Even if the actual game part isn't very exciting and it's riddled with degenerate shit from top to bottom, you'll probably pick that over the other game that you aren't too sure about and will likely go into unsure about since your idea of what an RPG is already doesn't match what this game is presenting from the get go.
