8 also has the most boring and weakest first arc compared to other FFs from the same era.
FF8 was originally meant to be half Laguna and half Squall, but they had to massively cut back on things because that would have been too ambitious for the timeframe they had to make it. A hypothetical FF8R could probably just expand on things without outright rewriting much by going back to all that cut material, possibly even with Laguna getting his own game assuming we're doing it in parts like FF7R.
If the character don't look exactly the same as in FF8 the nobody cares nobody wants the homosexual japshit in their remakes.

Depends on what exactly you're expecting by "pick up". If you already figured out or looked up how to get ahead of the power curve then combat doesn't get any more interesting until literally the final dungeon. Though at least you'll finally have a good number of GFs to play around with in disc 2. The story doesn't really shift gears particularly at any point, it's mostly continues at a pretty brisk pace made up of linear setpieces all the way until the end. The game does at least start to give you a lot of freedom to move around the world map 2/3 of the way into the 2nd disc, but outside Triple Triad bullshit the game doesn't have that much side content compared to other FFs.
