Tough to name one in particular, but I guess I'll go with Sanctum. It's one of those games where there are invisible teleports that force you to go back in bounds, except the developers weren't terribly careful with how they were placed so there are gaps if you know where to go. It also has the other sloppy boundarydev thing of invisible walls that aren't high enough to account for movement tech, so you can rocket jump on top of them and use them as platforms to go elsewhere you're not meant to be. Plus about 80% of the geometry outside the bounds of the map is real with collision and some of the maps are stupidly large for no reason.
I don't seem to have any screenshots of the extra ridiculous maps, but here's one that I consider to have a moderately large out of bounds section. The in-bounds area is barely visible in the distance. There are those 5 metal catwalk things and then a section of faint pale metal. That's where the gameplay actually takes place.
My other favourite out of bounds game is Unreal Tournament 2004. Unreal Engine seems to have a thing for making good OOB exploration.

The best way I can describe it is that they went from making a tower defence game with FPS elements to making an FPS with tower defence elements. Mazing is borderline nonexistent in 2 because they cap the number of blocks you can place and the towers themselves are shit to force you to shoot most things yourself. Also the sound design is much, much worse (i have to play muted it's so bad)
