The only build I have that works and isn't getting me killed on Bahamuth 400 VIII difficulty (I have yet to do start the rift dlc took a break) is with Axe and Berserker, is there anything else that works as good as that? Cause I honestly dont get how any other weapon/class can do as much damage by also not being killed as easely.
Damage-wise, it's kind of hard to match axe - that thing is designed to chunk, and it chunks hard. Greatsword has great survivability and decent damage, but if you can manage your footwork well enough, knuckles smash up monsters in a hurry.

Axe has the best raw numbers, but most channeled or charged abilities, among others, have gamebreaking potential regardless of weapon type
If you're looking to still interact normally without getting blown up instantly for a frickup, you probably want to play something like sword and shield paladin, and/or consider defensive buffs like Sentinel and Utsusemi so one mistake isn't death.

Didn't use sword (or mace) much, is it known what makes Shield Charge sometimes not do damage after parrying with it? I remember being annoyed a few times by being right up in a boss's face with nothing happening.

Team Ninja doesn't understand initiative, so any job is reduced to parry or dodge whenever the boss attacks you in any way. A job system is pointless when a Greatsword plays like dual daggers
