It's looks cool and it's basically the war where a lot of military tactics were either invented and used for the first time or finally retired, so it's a good melting pot of ideas.
WW1 was the great intersection of eras that basically allows you to throw anything in there and make it not all too jarring because man, they were up to some weird shit back then.
For me, it was the mix of new and old, old philosophies clashing with the new technology, the old bravado attitude which lead to young scions from great houses getting killed, and so on. I also really like the trench setting, there's a lot of cool shit to be made in there, anyone remember the 1916 game where you play as a regular joe in the trenches and then the krauts start sending in fricking velociraptors? That was fun as frick.

Currently, it's not as overdone as WW2, and both Battlefield 1 and Valiant Hearts proved the worth of that setting for video games.
