Technically there was one sentence before his final boss fight where he says he thinks peace is boring. He does contradict that with having the most non-threatening minions he's ever had that spend more time sleeping and eating than anything else.
The reason is he's the fricking once in a hundred years born male of the gerudo, and thus king of the tribe by birthright alone. Being told that growing up could easily go to his head, and make him think, hey, why shouldn't I rule the rest of Hyrule as well? He clearly is a very dominate individual. He was granted authority with ease, and now wants a challenge to expand his domain.

Unique. That he will rule his entire people by birthright alone. To reinforce this, he was clearly trained to be an amazing warrior. One who has hyper reflexes like Link, who gets sucked off for such things. When you have a man like that sitting on the throne, in a brutal desert, and not far away is an entire kingdom seemingly ripe for the taking, how do you expect him to act? He is special. ,He is born to rule. Why settle with JUST the Gerudo, when he could rule EVERYTHING?

I'm not even going to bother reading the rest of what you wrote if that's the first conclusion you jump to. You are interpreting his actions and adding your own logic to them because the game did not do that. They gave him multiple flashback scenes and not at one moment do they actually focus on him and give him a reason for his actions. You don't need a monologue to do that you can show that through multiple means.

The Lorule triforce was gone because they wished it away hoping to stop the constant civil wars over it. Also, Lorule is not bizarro Hyrule. The characters aren't really opposite, but rather different manifestations of the same things. So there isn't an evil Lorule Hylia or master sword.
Demise could have been someone fighting for it or something. I'm not the person who said it was evil hylia. I do belive Demise came from Lorule at some point though. Skyward sword takes place was before ALBW. There also might not be a lorule Master Sword because it was destoyed with Demise. His sword literally has the Lorule Triforce on it and both games were devolved by Monolith so there's always that. We dont really know much about Lorule to rule out the existence of different gods existing there. Also Demise being the reason the Lorule Triforce was destoyed instead of sealed kind of makes sense.

Even if you don't care about the story you should at the very least agree that the stories in BOTW and TOTK are very light. Not much dialog, not much actual story, not much time for the characters either. What you get is fine, enjoyable at times even. But compared to even something like OOT or SS it is extremely light and both BOTW and TOTK should have had more.

There's a difference between a villain not being nuanced and just not even having a coherent goal or motivation. Take for example, Sephiroth in final fantasy VII. Absolutely no nuance in his moral character, but he has clear goals, methodologies, and motivations. He thinks himself a superior lifeform and that he should consume the whole world to enhance his own splendor because he thinks the fact that he is capable of doing so proves his right to do so.
Now, what the frick does TotK Ganondorf want? I have absolutely no idea. He filled Hyrule with horrible monsters and then did nothing. Is he trying to bait Link into coming to him? Is he looking for Zelda? I don't know! He doesn't ever say his intentions or even interact with the world in a way that hints at what he even fricking wants. Does he just want to kill people? His gigantic monster army does nothing. Does he want to rule? He never made any demands of the people of hyrule or even communicated with them. It makes no sense.
Compare it to say, Ocarina of Time. At the start of the story, Ganondorf wants in the temple of time, and so he tries and fails to extort those people with the keys. After Link opens the door and goes to the future, Ganondorf uses his enhanced power to take over Hyrule. He destroys the capital city of his enemies, gives boons to those who submit to his will, and torments and kills those who disobey. He has a long term goal of getting the other pieces of the triforce which he does by having his monsters look for zelda, ultimately capturing her and using her as bait to draw in Link, who has the third piece. We even get other tidbits of his character and motivation, like how he completely neglected the Gerudo prophecy he was born to fulfill, or how he torments his own minions for failure. Why does TOTK Ganondorf not have ANY of this?

yeah this is the problem with having an antagonist that is more than an imprisoned force of nature for this format of zelda title. calamity ganon worked because it had no story agency, it was just a phenomena that caused monsters to spawn giving the player the story freedom to meander around, looking for forest children so they can get a poop hat. the urgency of TotK in comparison doesn't work because by all means ganondorf should be playing a much more active role, but because the format of the game demands that most places remain intact for the player to reach at any time he becomes a passive force, waiting for the player to show up to kill him.
I personally don't mind this too much, I don't really seek out or care about the story, I'm here specifically to wander around, doing quests and finding shrines but I can understand why it would be annoying to someone who does care

My interpretation is: Ganondorf is the only man in an entire nation of women. I thought he was done plenty fine. He was the male Gerudo king, who clearly set his sights on Hyrule to expand his domain, as he feels its his birthright to rule. He got blown the frick out by Rauru, and started to covet this secret stones that gave him so much power. He pretended to submit to get close to them, then stole a stone for himself. Its clear at that point the stone went to his head when he used it and warped him into the all consuming Demon King he was going forward, wanting to plunge the land in darkness. Flash forward to him waking up as mummydorf, and he basically held up in the depths slowly rehydrating while sending him minions out to terrorize the land. Except there was barely any opposition. He even states how disappointed he is there isn't shit worth opposing him top side. He didn't do shit because he was both recharging, and saw no meaningful threat to even overcome. Then as you beat his ass, he gets more and more invigorated and goes full Demon King again.
Triforce of power is a corrupting force. You just want to feel good about headcanon while you look at porn

Ganondorf's fight was basically a Dark Link fight that evolved and got stronger as the fight went on. He has the same kinds of weapons that you use and similar abilities.
As a final boss it works, and you're still using skills that you should have built up playing through the game. If it was just some random enemy or mid-game boss that pulled this shit yeah it would be badly designed.

Ganondorf in OoT was never shown with any more motivation than muahaha evil, and given that the past events of TotK are basically a retelling of that story I didn't expect any differently.
I do think it's a missed opportunity for Zombiedorf, though. We've been shown in WW that after hundreds of years of imprisonment, Ganondorf became more pensive and thoughtful. He was still evil and had the same goals, but he was able to justify why he felt the way he felt and did what he did.

I actually agree with Ganondorf in this game. The Zonai are not native to Hyrule but one of them becomes King and married a brown hylian. Ganondorf has every right to want to rule. He also has the Triforce of Power, which makes it his calling. Rauru is a huge homosexual who should have just died.

If you were the sole male born to an all female society, you'd likely pretty easily get some notions that you should rule everything, especially land owned by some smelly goat man always going on about his secret balls.
Unfortunately races will never actually factor into any story or any character's feelings or motivations because Nintendo wouldn't want the potential for controversy there. Kind of a shame because I think Hyrule would be more interesting with just a touch of politics present. Closest we'll ever get is OoT.

He does say that Rauru tried to control him after he surrendered, but given Ganon's mindset that might have been anything Rauru said, up to and including accepting Ganon's pledge in the first place
Funny enough he actually approves of Rauru's marriage to a Hylian in a very Gerudo line of reasoning even if he simultaneously uses it as an opportunity to point out they're alien invaders

The goddesses seem completely random in how they act. They're almost totally hands off except for the one instance in Wind Waker.
No, gods are generally shown as pretty fickle and aloof. The triforce as a whole would want a wielder who can embody power, wisdom, and courage. Since Ganondorf is the one that tried to steal it, and he only embodies power, he could only claim that piece.

The pantheon is unexplored so we don't know much about them. This is especially true in the breath of the wild setting, as the goddesses are not really referenced and other gods and mythological beings exist (Hylia, the horned god, the faeries and the bargainer brethren, and the zonai were treated as living gods as Ganon points out)

I don't actually care if his motivations are one-dimensional or thin. My issue with Ganondorf in TotK is that AN ANCIENT EVIL AWAKENS in the first cutscene and then I have literally no clue what he's doing the rest of the time. There are some obviously fake Zeldas walking around but they honestly seem to be kind of helping because they keep guiding Link to the source of various problems. Most people don't really give a shit though and the various races think the things happening to them are shitty, but not like world-ending bad.
No one really seems that put off by what's happening and no one's talking about an upsurge in monster activity or anything. The monster clearing forces feel like they're just an existing service in the wake of BotW's Calamity where they're mopping up dumb monsters that are just content to sit around roasting fish and fighting each other even after Ganondorf's reawakening. The majority of story content you get is stuff in the past with Zelda desperate to help you defeat what is apparently the baddest dude ever, but once the guy reawakens, nothing really happens. The castle flies into the sky and gloom shows up, but it doesn't seem to be spreading and nothing more than a minor inconvenience where most people just avoid touching it. In my like 70 hours of gameplay, it never felt like Ganondorf was actually doing anything. I honestly forgot what happened to him and had to rewatch the opening to see that he just fell back into the hole.
If his plan was to just divide and conquer, he wouldn't lead Link to the sources of all the problems and would lead him on a wild goose chase or something. I don't think there are any quests where one of his Phantom Ganons are menacing a town or something. They're all in out-of-the-way areas that do nothing until triggered.

Orcs are corrupted elves, not original creations. Similarly, trolls are mockeries of ents. Balrogs are corrupted maia. With dragons it's less clear, I'll give you that, but they were likely bred forth from some other type of beast.

Im tired of pretending wind waker ganon was not kino. I have read monologues by classical REVERED literature villains and his monologue is genuinely on par with them if not better. It is the only time barring wind waker where the zelda games (or nintendo as a whole) has written kino. Maybe TTYD is a distant second.

The voice acting is there because their target audience refuses to read. There's no grand purpose or artistic vision behind it, they're not doing it because it improves the games. The bar as just dropped so low that reading - a skill everyone learns as children - is now considered asking too much of the attention span of their audience. Majora's Mask is my favorite, but do you think it had a focus on writing? The mood is nice and Skull Kid gets some back story, but it's the same cliches and quirky characters as every other Zelda game. You could replace every line of dialogue with gibberish without subtitles and the only thing it'd hurt is how the games deliver tutorials.
