Creating a world with lore and atmosphere that is built to be cryptic and give you just enough information to get your imagination running is better and harder to do properly than a passable story written based on a template with little to no creative input by the "artists", just drawing within the lines of a marketable product with a demographic. It is the perfect type of storytelling for a gameplay focused arpg.
FromSoft has completely forgotten how to do that approach after Dark Souls 1. Their "lore" these days is literally just random concepts and content spliced together with no inkling of a grander story or even a coherent plot.
I liked Bloodborne and Sekiro's worlds a lot, Elden Ring had some cool ideas but what you said is very true of that game, more than any other, DS3 was too meta.
