Personally, I would force the player to use the song to communicate with Saria more. Also, I would make it so you can visually see her sitting at her log when you called on her. Allowing the player to see her smiling face anytime.
I would make Mido more of a character, I would tie the Owl into a sidequest, I would tie the deku sprout into a sidequest, I would have Malon challenge you to a race across hyrule field, I would put the happy mask salesman in kakariko first, and he would open up shop in castletown if you complete his sidequest giving you the mask of truth still, which I would tie the mask of truth into the biggoron sword sidequest as well, hiding the odd fellow deeper into the woods, and I would place another interaction with him again rehiding his nearly transformed self somewhere, I would have Indigo move to kakariko when you embarrass him, I would have the game save and continue after defeating Ganon and you can go find the sages where they should be normally, and if you interact with all of them you unlock a newgame plus where they send you back in time to the beginning of the game with story variations. doesn't need to be canon, but a fun bit of fan service.
When I played this as a kid I had a similarly short haired female friend who I had a crush on, I don't remember if I liked Saria because of her or liked her because of Saria, but I'm glad I got that sort of projecting out of my system at a young age before I did something autistic when older.
