Because in this context the syrup (plant product) is from a direct plant source. It doesn’t have the same “magical” vibe as the other Fairy foodmons.
Honestly my only complaint is the time we got it. It’s a fun little split evo for a Pokémon that has two other split evos, with Dipplin being for the Applin fans who wanted a final product that resembles the base stage more. Harmless fun.

there are so many possible variants that they could turn this thing into the next Evee/Rotom. In fact, fan artists will probably do what they did with Yamask back when the regional was revealed.

I've seen people liken Dipplin to G-Max Flapple/Appletun, which is cool in its own right. Salvages the gimmick design and repurposes it into an actual Pokemon. The two certainly have their similarities.

Branched evolutions are great, and the addition of Dipplin makes the Applin line only the third line with more than two truly different final stages after Eevee and Tyrogue.

The entire point of Florges is that it has a symbiotic nature with flowers, not that it actually is one. They gave it pure fairy typing and doubles abilities/moves that pair well with grass types for this reason. Making it an actual grass type would go against its lore and gameplay niche. Amazing how people are still filtered by this a decade later.
I'm pretty sure it's just because GF is fricking terrified of a pokemon that can benefit from its own Flower Veil.
