jumbo mechanic seems cool so far, there's something similar to 5's revenge gauge, combos are doing moronic shit and i don't really know what's going on with them yet

It never had it? The game gets harder as you go because that's how games work, but it never scales. If you power level, you can stomp anything.

enemy levels are always set per map and only change if you use the ingame cheat shop to alter enemy level
item world enemies get stronger the deeper you go

Not good, they made a lot of changes that got reverted in 7, and from the 7 demo I can tell it may be a good one
5 is excellent
6 is such a trashfire i couldn't even make it through the fricking demo
5 had the best mechanics in the series.
6 was a step backwards, but it's also overhated.
