I don't see why anyone would be a "fan" of this series. Liking individual games, sure, but most of the games are nothing like eachother, either in terms of gameplay or story.

I've played all the mainline games (beaten most of them, and the ones I haven't beaten I've played enough to have a solid opinion on), including 11 and 14 (1.0 and ARR), plus a bunch of spinoffs including X-2, XIII-2, LR, both CC's (Crystal Chronicles and Crisis Core), DoC, 7R/Intergrade, Tactics, TA2, SoP, WoFF, all the Dissidias, Theatrhythm, Type-0, and even Explorers. I haven't played really any of the mobile games, Dimensions, TA1, 4HoL, 4AY, Mystic Quest, any of the Crystal Chronicles sequels, or any of the Chocobo games
I also imported and played the International versions of X, X-2, and XII via a PS2 swap disk long before the HD versions came out, and I even own the Japanese blu-ray copy of Advent Children Complete with the first playable XIII demo bundled with it. I've also played plenty of FF-adjacent games like KH, PE, VS, and TWEWY
My favorites are 7, 9, 11, 12 IZJS, and SoP with honorable mentions going to 5, 10, 10-2, and LR. I would call FF my favorite series as a whole, though no individual game cracks into my top 3, maybe not even top 5
6, 7 (the original, not the remake), or 10 are probably the best introductions to the series. Every mainline game is a standalone story, setting, and cast so you can play any of them without needing to play any others, but those three are probably the most accessible while also being comprehensive showcases for the series' strengths and appeal.
If playing 7, I definitely recommend the original PS1 version (emulated if you have to) over any of the modern re-releases like on Steam or anything. The re-releases are based on the old 1998 PC port which is plagued with issues that none of the re-releases have ever really addressed. Similarly, 10's HD version has fricked up character models that can undermine some of the emotional moments of the story and just look shitty in general, so the original PS2 version (or the Japanese-exclusive PS2 "International" version which has full english text and audio plus all the bonus content from the HD version) is better. 6's re-releases aren't as botched, outside of the old mobile port which isn't even available nowadays. The SNES version, the GBA version, and the Pixel Remaster version all have their merits, with SNES being the most authentic and PR being the most accessible
It's 10 if you need tolerably recognizable "modern" graphics and aren't ready for ATB timing (though this is very easy), 7 if you don't care about graphics and want ATB timing, 3 if you want pixel nostalgia and Le Job System
The games are not connected unless the number is the same. Just pick the one that looks coolest. The most baseline classic FF feeling will be I, VI or XIV the most baseline modern FF would be VII or X.
As a Zelda fan, the only game I haven't playes is Wind Waker and the BOTW stuff
