I normally just choose normal. If it has Easy/Hard, I choose hard since easy is usually baby mode. If it has sliders for the resources of the game that could affect difficulty, I get it to the middle. If souls games ever do add in an easy mode, I shall not play it.

I play on hard mode sometimes when I know I want to have fun although there's been times when I was playing the MegaMan zero games with one hp on a boss fight because I would rather savestate on one hp than redo the entire boss fight
