Akira Toriyama is not the main designer.
Toriyama is a character designer. And while he don't necessarily enjoy designing humans anymore, he still loves designing monsters, and gives his all with each project. As the article you linked states plainly.
I started playing IX recently as my first DQ and it's alright so far, just beat a crazy demon lady that cursed a knight to live forever with her.
But i found out the game was supposed to be multiplayer. Am i missing something missing much if i continue going Solo?

I also started with 9, them I decided to beat them in order of release and got all the way to 7 (haven't finished it yet). If you're digging the job system, 3 and 6 are up your alley. 4 is my personal fav in the series, though.
That said, you are going to be missing out on some things by playing after online shut down. I don't know how you're playing the game, but you have the option of using a save editor to unlock the things that you would've gotten by connecting to the internet, or you can outright connect to an alternative server with Wiimmfi.
