I checked and the demo only take 4gig not 7 like the menu said so my conclusion is that the menu is suppose to warn you for the whole game not just the demo.

no you still need regular ram and not just vram, when vram runs out the system needs to use regular ram which is slower than vram since it's not a direct part of the gpu
also the RE Engine VRAM usage thing has been weird ever since RE7 where it says you need more than you really do so it's never been completely accurate. numerous people have had false readings and it's been documented
that being said it's always good to have enough vram for the games you want to run at whatever settings and resolution you want to run them at
it's why 12/16gb gpus are becoming much more common and needed if you want to max out newer games, especially if you don't like dlss or fsr upscaling and like stuff like ray tracing
