Because he spent several hours for days getting summoned and helping people beat her. If it was just another dude uploading a video of himself beating Malenia, no one would have given a shit. People were impressed and had a chuckle at his dedication to the bit and how he was being genuinely helpful to a lot of people. There were threads on reddit and here and other places with people all saying they had summoned him, to the point that a few people speculated for a little bit that he was a weird NPC summon.
From games have always fostered that spirit of "jolly cooperation" alongside the dickish invading, and this guy just embodied that for a lot of people.

Once you figure out how a boss works, it stops being a big deal. No footage was required. It was not unthinkable that some dork beat Malenia for thousands of people. There was less chance of somebody *not* doing exactly that.

stuff like that is almost always more of a reflection of how genuinely horribly balanced all the souls games are than anything else. Those dance pad vids always have their character with a health bar the size of the entire screen and mega inflated damage values or some shit. And typically a bunch of armour too and a strength weapon (because it's the most braindead weapon. don't have to put in as much work if you can rely on 2 or 3 hits instead of 6)
It's so sad too, because my first dark souls playthrough blind was so perfect, I was sure the game was tightly balanced. Bloodborne too, but I broke that game so fast for myself once I got past the first yharnam and got a DLC weapon
