I assumed they were Two Fingers flunkies but that doesn't really match up with where you find them.
The Ringed Finger weapon's description mentions blasphemy, which ties into the theory that they're linked to Rykard, but I don't know why they'd be up in the giant's mountaintop instead of just circling around Volcano Manor.

Carian attempt at understanding The Fingers, discarded like everything else, which is why you find them buried in random places but instead of standing straight up they wait to trap people because Carian sorcerers actually just made murderous weapons instead of divine messengers

I parried him twice in a row (first boss I have come across where I needed to) and he doesn't become vulnerable until the 2nd parry, hard enough doing it once but not sure what else to do. Dodge rolling doesn't seem to work when the boss has a big shield slam attack
I was using +3 lordsworn great sword and then thought I'd try using a regular mace and shield. Is the game really that much easier as a mage? It sounds harder being a glass cannon but I picked the knight looking class and mostly went into strength.

Yeah kinda. It depends on the situation and what magic you've collected up to that point.
With the range of overpowered spells you can get by the end of the game it can make a huge difference, but there were also a lot of fights early on where I felt like I was just stuck in a boxing ring with an angry bear throwing glowsticks at it.
If anyone's really fricking you up just go on a fifty mile hike in the opposite direction and come back later with a slightly bigger sword.

That knight is definitely tuned way higher than basically anything in the entire region, including a couple other crucible knights. Don't feel too bad

The Carian Nobility made them. Volcano Manor was amassing an army out of whatever they could get their hands on, which is why so many disparate enemy types appear around Mt. Gelmir. Although since Rykard is the lord of Volcano Manor, he may have just brought some with him.
I'll tell you what they are, reused assets that were put in the game because it looked cool. Just like almost everything in these games. Reused concepts, reused lore, reused characters with different names...
At this rate, the dlc will be set in a giant recycle bin.
The game has a ridiculous amount of original content, but I also wish that they had just cut out half of the copy-paste mini-dungeon tombs and caves.
