Story, music, and level design take a fat shit all over ER. The weapon blade/handle system is also the single most innovative feature in the souls genre yet.
Anecdotally I also vastly prefer the bosses in Lies of P. Elden Ring really quadrupled down on input reading an "le gotcha" boss movesets that trick you into rolling or counterattacking so you get hit. The bosses that don't do this are just hyperaggressive with not much rhyme or reason to it. Lies of P's bosses have a very surprising amount of depth and variations in their attack patterns that few people give it credit for. The same boss can do every imaginable variant of a 4 hit swipe combo (e.g., all 4 hits, 3 hits and a delay into 4, only 1, 2, or 3, etc). This makes them extremely fun to fight. Some suck though.

To go back to your boss complaint, while I agree that ER does commit a few sins in that regard, lies of P can't touch stuff like sekiro. Many boss attacks in lies of P have that bullshit where they'll have a long wind up but then will instantly come crashing down making them borderline unreactable. You have to get hit at least once and memorise the timing to deflect it or you're fricked. In sekiro you can parry a lot of attacks based on reflexes alone. You can't in lies of P

You don't hear them in gameplay except for very few instances where they don't really fit at all. Elden ring could add a great rock track that you could listen in at the round table at that would be worthless because who cares if it's not during actual gameplay.

Lies of P is a textbook example of why plagiarism laws have to exist and be enforced. From beginning to end, the experience is soured by the poor quality of the code and optimization, even on the PS5. It's full of bugs and is outright unplayable. To think that the korean developers at neowiz thought to release a game so unpolished surprises me, but what truly leaves me in shock is the sheer amount of COPE from consumers who defend this soulless asiatic jank.
No, blatantly trying to imitate the recipe that From Software perfected through a decade of experimentation and refinement over the dark souls, Bloodborne and Sekiro games doesn't make Lies of P a good game. Worse, it failed at delivering the actual strengths of the genre. The level design is amateurish, repetitive and corridor tier. Funny that they tried to spice things up by placing obnoxious traps and other "gotcha!" moments throughout the game with absolutely none of the subtlety and visual storytelling Fromsoft is known for, that could allow you to planify around and react to those obstacles. The boss fights have nonsensical attack patterns and hitboxes defying logic, making dodging and parrying needlessly more complicated than it has any right to be. Human enemies who you would expect not to defy the faulty game logic was trying to establish just go full moron and defy your expectations in a completely unfun manner. Always love reading the non-argument about how puppet monsters having disjointed attack patterns was to be expected coming into this game, and yet it's the human/monster fights that show the highest amount of moronation.

Depends on what you use really. Some of the weapons have mediocre Fable arts. For the Krat Baton Handle + Wrench combo you for sure want the slots though (or you could probably use catalysts, bosses stay staggered for ages).
Passed with a standard power blade, occasionally changing handles. I really liked the way it looks with the handle of a fire axe, reminds me of the swords of elves from Lord of the Rings, but P holds and waves it like a moron, so the aesthetics is lost.
The Wo Long weapon is the best and most fun in the game. The weapon from Champion Victor is the best STR weapon besides the one from Manus.
Second the Azure Dragon Crescent Glaive. It's so good, I feel so badass when I use it.
Try the booster glaive handle and pretty much whatever else with it.
