You should watch highlights from it and read a breakdown of the plot just to appreciate the characters, their powers and their designs. Do not force yourself to watch the entire show.
It's fine if the wearer is magical or super human, the armor is magic, or if the wearer is a normal human in a setting full of monsters and magic weapons that makes full armor mostly useless anyway, especially if male characters wear armor with similar coverage.

Knights are just lesser nobility. There's nothing that special about being a knight. Women didn't become knights because women have the power of marriage but there's nothing preventing her family from offering a favor to the king to make their daughter a knight for shits and giggles.
Yes save for the armor and weapons and the horse and the training needed to use them and the tactics used to lead units into battle, there is literally NOTHING unique about knights that separated them from other soldiers.

Knights are usually landowners or children of landowners because they have the money to throw at full plate and a good horse. training depended on how serious they took it, but knights didn't lead anything except maybe minor skirmishes against peasants. They were just one of many parts of a lords army. A fairly important part because shock cavalry remained very impactful for quite a while, but as time went on their combat role was seperated from being a knight and it became more of a social title than a military rank.
In my homebrew setting we have four types of female warriors
>pegasi riders (only women can ride them)
>unicorn riders (only virgin women can ride them)
>amazons (have to be made artificially through an alchemical ritual)
>wizards (you can either do magic or you can't and whoever has it can't afford to be turned away)
