I'm at 6/12 and I'm already tired of doing it honestly.
My savage job is SGE (ilvl625) so it's my most geared.
My SAM is only ilvl610 and it take a frick ton of damage so having to heal myself is annoying.
My Tanks are also 610 but they feel just as fast as my SGE.
I solo'd the variant dungeon my first time and other than bloodbath I only had to heal when I fricked up a mechanic, what were you doing? Not using rampart properly?
Day 1 is always a rest day since you don't know what to make before it.
Your other rest day depends on what's good on what days. Typically I just go one day at a time and when I get to a day where there's no way to chain together (very) high/nonexistent demand/supply items I just make that my rest day.
Tomorrow is a fine rest day since there's only one nonexistent/high item (ribbon) for example.
Today is an incredibly shitty week though since all the granary crafts are average demand besides the silver cuffs.
I haven't tried savage yet but he's the second boss in the criterion dungeon normal mode at least. It took my group a long time to get past the fluffy guy.
Dungeon-wise, what's the best thing to do to push past levels -0 when leveling something for experience gain? Doing the level -9 dungeon, or doing whatever the latest -0 dungeon is?

It’s not about “winners”, it’s about making multiplayer content worth playing. Criterion and savage require a static now, it’s not for most people. And the casual content is so linear and repetitive. it is an upper end cap only. Any items above the sync ilvl also do not give you the materia stats, but the lower of the two secondary stats can go higher than the ilvl cap items have. non-current ultimate bis plays around with this system a lot to minmax stats.

Each of the relic lines starting in HW has it that the WoL is basically blazing the trail on prototype weapons that are intended to see wider use and application after all the experimenting is done. Anima weapons were Rowena trying to market uniquely powerful weapons to adventurers, the Eureka weapons were trying to make use of the aether in Eureka, and the Resistance weapons were being made for all of the best fighters in the Resistance and other people wielding the weapons were in the story. Manderville stuff is probably the same way.
And giving the WoL incredibly powerful weapons is honestly a pretty solid general defense strategy.

The only thing i noticed is that you really need to pick your actions well. Tank usually needs a heal spell, as there is constant damage. And DPS (probably?) needs rampart.
Ok, I wasn't sure. I only ran DPS once, but it was with my FC, so I wasn't alone. I used rampart when tank died the once.
But yea, Solo I haven't tried as DPS. only tank and healer.
Solo is easy as DPS. Rampart when its on cooldown/before tank busters for the damage shield and the cure regen will pretty much keep you alive unless you frick up

dungeons sorta disappointing to be honest. It's fun the first 3 times just exploring, then it becomes clear it's just as formulaic as everything else in the game. Also can't level alt jobs in it, no catch-up gear, only 1 cosmetic set.
Meh, decent first iteration but it's lacking. Despite being new content it feels already old because it just repeats old systems and incentives. Before I even had access to the rewards age I guessed there would be a mount/cosmetic set/orchestrion roll/materia. There strength to be had in that sort of reliability from the game but frick me does it get repetitive.
Might just let my sub run out in a couple days and come back for 7.0.

why does paladin have the reputation for spreadsheeting out fights when gnb suffers from shit going wrong if you dont spreadsheet way more and also has more ways things can go wrong
you have to hit gnashing fang and blasting zone every 30s or you start to drift out of buffs/lose uses, which means you need to be in melee range with a cartridge when this comes up. you also need to be in melee range with 2 extra carts every minute for double down or that starts drifting as well, getting these carts requires about 30 seconds of melee uptime
all of this means that if fight mechanics line up in a way where you need uptime to hit these buttons on cooldown but the boss has fricked off or getting into melee range will kill you, you're shit out of luck and now you're doing less damage then normal. storms crown EX is an recent example where you want to hit no mercy/bloodfest a few gcds earlier then the normal opener in order to have gnashing fang on cooldown sooner so you can land its first hit just as barbie jumps away for curling iron because the normal 123 timing will have gnashing fang come back off cooldown as she jumps away and then that shit drits a good 15 seconds
compare this to paladin spreadsheets, where you hit an ogcd to turn on requiescat well in advance to when you actually need it, 20 seconds of your 60s rotation loop are long range attacks, missing a goring blade is much less potency lost then missing a gnashing fang, and your only resource is mp that is impossible to run out of unless you're spamming clemency
AND gnb has to weave more, meaning that if you actually have to do your fricking job as a tank instead of just hitting a training dummy you often have to do shit like premtively weave mitigations well in advance to when you need them and hope the duration is long enough while paladin can often just hit buttons in response to the cast bar

Soloing the variant dungeon is a pretty cool way to practice a job you're not very good with. Unless you're a healer in which case you get to do even less than regular dungeons.
It's going to be the main gimmick for the new caster come next expansion, since they'll never make another turret caster for fear of BLM losing its top spot.

Read the lore entries you get
Read the burglar's note in the treasury
Outside of puzzles, the following things matter for lore entries:
Left path: Whether you cleaned the pipes or left them dirty
Middle path: Whether you pulled the right or left lever right in front of the final boss (if you didn't take the teleporter)
Right path: Whether the Cryptic Portal was destroyed (after answering wrong) or left intact (answering correctly or not taking that route at all)
All other choices or random events are completely irrelevant and just change the first boss' mechanics
The puzzles were genuinely fun to figure out without a guide, highly enjoyed it, hope they do more of it

This only affects the mid-boss
The real choices in the left path for the final boss is whether you touch all the dandelion patches or not or whether you open or ignore the barred door in the secret area

Since this was my first expansion release I felt this way but it happens that catching up is very easy and doing competent DPS in anything not Savage is more about not fricking up rotations than being BiS.
I never really struggled with difficulty (I've always played DRG) because as you said it's mostly just not messing up rotations or standing in the "stand here to die" spot. It's been fun

My savage job is SGE (ilvl625) so it's my most geared.
My SAM is only ilvl610 and it take a frick ton of damage so having to heal myself is annoying.
My Tanks are also 610 but they feel just as fast as my SGE.
Solo'd Variant my first time, it's neat but it feels very slow, and like said you need to heal yourself a lot which is annoying.

Day 1 is always a rest day since you don't know what to make before it.
Your other rest day depends on what's good on what days. Typically I just go one day at a time and when I get to a day where there's no way to chain together (very) high/nonexistent demand/supply items I just make that my rest day.
Tomorrow is a fine rest day since there's only one nonexistent/high item (ribbon) for example.
Today is an incredibly shitty week though since all the granary crafts are average demand besides the silver cuffs.

Dungeon-wise, what's the best thing to do to push past levels -0 when leveling something for experience gain? Doing the level -9 dungeon, or doing whatever the latest -0 dungeon is?

Level cap dungeons give poor experience compared to leveling dungeons.
If you don't have roulettes to get past it, PvP is the best way to level at X0. Failing that, Bozja/Deep Dungeons are the best.
Anything from -1 to -9, just figure out which one you can burn through the fastest in the tier. All of the -0s take longer and the exp is half-assed.
X9 gives the best exp until the next X1 dungeon, the only exclusion to this is the shit in MSQ roulette

it is an upper end cap only. Any items above the sync ilvl also do not give you the materia stats, but the lower of the two secondary stats can go higher than the ilvl cap items have. non-current ultimate bis plays around with this system a lot to minmax stats.

Each of the relic lines starting in HW has it that the WoL is basically blazing the trail on prototype weapons that are intended to see wider use and application after all the experimenting is done. Anima weapons were Rowena trying to market uniquely powerful weapons to adventurers, the Eureka weapons were trying to make use of the aether in Eureka, and the Resistance weapons were being made for all of the best fighters in the Resistance and other people wielding the weapons were in the story. Manderville stuff is probably the same way.
And giving the WoL incredibly powerful weapons is honestly a pretty solid general defense strategy.

Solo is easy as DPS. Rampart when its on cooldown/before tank busters for the damage shield and the cure regen will pretty much keep you alive unless you frick up

dungeons sorta disappointing to be honest. It's fun the first 3 times just exploring, then it becomes clear it's just as formulaic as everything else in the game. Also can't level alt jobs in it, no catch-up gear, only 1 cosmetic set.
Meh, decent first iteration but it's lacking. Despite being new content it feels already old because it just repeats old systems and incentives. Before I even had access to the rewards age I guessed there would be a mount/cosmetic set/orchestrion roll/materia. There strength to be had in that sort of reliability from the game but frick me does it get repetitive.

GNB is braindead easy what the frick are you talking about? the only time you lose damage is if you have to move during your combo.
you have to hit gnashing fang and blasting zone every 30s or you start to drift out of buffs/lose uses, which means you need to be in melee range with a cartridge when this comes up. you also need to be in melee range with 2 extra carts every minute for double down or that starts drifting as well, getting these carts requires about 30 seconds of melee uptime
all of this means that if fight mechanics line up in a way where you need uptime to hit these buttons on cooldown but the boss has fricked off or getting into melee range will kill you, you're shit out of luck and now you're doing less damage then normal. storms crown EX is an recent example where you want to hit no mercy/bloodfest a few gcds earlier then the normal opener in order to have gnashing fang on cooldown sooner so you can land its first hit just as barbie jumps away for curling iron because the normal 123 timing will have gnashing fang come back off cooldown as she jumps away and then that shit drits a good 15 seconds
compare this to paladin spreadsheets, where you hit an ogcd to turn on requiescat well in advance to when you actually need it, 20 seconds of your 60s rotation loop are long range attacks, missing a goring blade is much less potency lost then missing a gnashing fang, and your only resource is mp that is impossible to run out of unless you're spamming clemency
AND gnb has to weave more, meaning that if you actually have to do your fricking job as a tank instead of just hitting a training dummy you often have to do shit like premtively weave mitigations well in advance to when you need them and hope the duration is long enough while paladin can often just hit buttons in response to the cast bar

Variant is about as difficult as your standard dungeon. Criterion is harder than most extremes they've released recently.
Variant boss mechanics are a smidgeon more complex and numerous than a typical dungeon boss.

criterion is ex/savage level
criterion savage is at or beyond ultimate difficulty

That's only part 1 of that puzzle
Read the lore entries you get
Read the burglar's note in the treasury
Outside of puzzles, the following things matter for lore entries:
Left path: Whether you cleaned the pipes or left them dirty
Middle path: Whether you pulled the right or left lever right in front of the final boss (if you didn't take the teleporter)
Right path: Whether the Cryptic Portal was destroyed (after answering wrong) or left intact (answering correctly or not taking that route at all)
All other choices or random events are completely irrelevant and just change the first boss' mechanics
The puzzles were genuinely fun to figure out without a guide, highly enjoyed it, hope they do more of it

This only affects the mid-boss
The real choices in the left path for the final boss is whether you touch all the dandelion patches or not or whether you open or ignore the barred door in the secret area

It felt like a *big* FF game I had lots of fun. It feels a bit hard to jump back in now-like I'm too far behind. But I always imagine how I felt when I first started. All I really care about is the fun story and getting cool outfits for my guy
Since this was my first expansion release I felt this way but it happens that catching up is very easy and doing competent DPS in anything not Savage is more about not fricking up rotations than being BiS.
I never really struggled with difficulty (I've always played DRG) because as you said it's mostly just not messing up rotations or standing in the "stand here to die" spot. It's been fun
