Disc 2 is significantly shorter than 1, and 3 is just a dungeon. It only exists because of the ending cutscene.
Disc 2 is ultra short, and Disc 3 is only the final cave onwards.

In the OG 7, the Zolom may be "just an enemy, but it's also practically guaranteed to wipe your party at that point in the game. You're supposed to stay far away from it. In 7R, it's a mandatory boss fight sequence where Sephiroth swoops in and saves you. It might look more impressive, but its actual presence in the game is diminished, from something you must stay away from to something you have to fight, just for Sephiroth to save the day anyway. If you seriously think the Zolom is more intimidating in the remake because it has more gooder graphics, or can't see why finding it already impaled at Sephiroth's hands is scarier than actually seeing it happen in cartoonish fashion, then congratulations. Aerith's death is played well, but she basically stops existing after that. In fact, Cloud's entire erratic behavious ir ignored by everybody, at all times, even though Tifa and Aeright had good reasons to believe he was insane from the start, while the rest of the party had those reasons showed to them from Midgar onwards
The final battle is moronic. It is basically "Sephiroth sends a MINUTE AND A HALF custscene that transforms all your party in FROGS, you heal yourself, attack him, and now it repeats, like 15 to 20 times before it ends unless you're the type that spins around grinding

Iin Remake he isn't playable. he just shows up in a couple cutscenes at the end (and another cutscene after you beat the Yuffie DLC).
In Rebirth he is playable for a few brief segments, but he is not with the main party. according to leaks that haven't been disproven (or proven with images yet) Cloud can somehow do Synergy attacks with him during the final boss fight(s)

The choices were only there to waste your time, to give you an illusion of choice in an rpg, to make you think they'll matter in the sequel remake, or at all, so you replay the same shit more than once, maybe even make seperate saves with different choice, so you can load them up when you play the sequel.
It was a deliberate ruse to make you think it justifies the price tag and your investment, and done with the mindset that by the time the sequel remake comes out, you'll be over it and it won't have as big of an impact on you when you realize you were duped. Fast forward to now, you're slightly annoyed, but not angry, it's not that big of a deal because enough time has passed for them to get away with their trickery, it's funny, actually, silly to even get upset about, right? Just eat it up and move on.
The one thing you can hope for is a recap comic/video like Bioware did with ME2 when it released on PS3, where in the most shallow way possible, the game lets you pick the choices you made in 'part 1', no organic way stitching your choices together in-game to make them seem meaningful and worth your investment.
Part 3 will end with the final shot of the original extended revealing that the entire story is a vision that Aerith had. She writes a book afterward named "On The Way To a Smile"
