In SB, if you don't recruit Byleth (and by extension kill Jeralt), Byleth will convince Claude to betray the pact he makes with the Empire, and the ending will say that all three countries are at war with no end in sight. If Byleth is recruited, then the Kingdom and Alliance remain in a solid partnership during the ending, with the implication the Kingdom will be defeated shortly and peace will come about.

If you want something leaning more oldschool, I'd start with the first FE we got, known now as Blazing Blade, but originally without any subtitle in the west. Alternately Sacred Stones if you want something not too difficult.
If you are more into waifu simulators, Awakening is likely your best bet. Fates Conquest has the best map design of modern FEs, but it's story is kinda garbage.

The game runs at playable FPS but I still experienced some instabilities. Although, I have figured out a pretty good configuration for mouse controls so that you can use it instead of a controller and actually left/right click for attacks and so on.

The EA2836 seems to be stable, if not try going backwards by 1 each time, but the current latest one seems to be working fine.

Church route where you turn down your path’s lord’s offer at the end of chapter 3 and go back to the Monastery, only to find out it’s closed down. Catherine and Shamir encourage you to join the Knights of Seiros because Alois has wandered off, and you accept because of the monthly stipend since the Knights get freedom to travel. Adventures include fighting Randolph in Ailell, holding back the Empire at Merceus and Arianrhod, attempting to assassinate Edelgard in Enbarr, and reclaiming Garreg Mach.
Slithers route where you reject the Knights’ offer and become a hobo again, trying to find Jeralt’s Mercenaries. Adventures include being hired by Arundel to protect Cornelia, being hired to assassinate Hubert and Ferdinand, helping raise havoc in Ordelia and Hrym, facing off against Byleth at Remire Village, and having a final confrontation to overthrow Thales and take over Agarthan operations when Arval’s memory comes back and Shez is overwritten with Epimenides. Only is this route do you find out who your adoptive mother really was. Both Church and Slithers route gives you access to Shambhala.
Seiros, Sothis, and Arval can be trained at the trainer and have their abilities upgraded by the tactics master.
War monk, Valkyrie, dark flier, and hero are added to the game; Holst’s default class line becomes fighter->brigand->hero-> wyvern lord.
All classes can use whatever weapon a unit has trained up in, though flying and riding units cannot mount if they aren’t using the weapon native to their class set. A dark knight can mount if using a lance, but not if using a tome.
Hopes certainly would be the best opportunity for a Slithers route, but somehow I doubt we'll get a full on villain campaign. Despite how everyone else is treated on any given route, the Slithers are always pure heels.

To be honest the golden deer cast is just beyond redemption, like on SB the contrast is wild, you have Ashe going on about how he has nothing left, but then at the same time you have Raphael smiling while talking about meat and Ignatz happily talking about seeing the sights, and this is while the alliance and the empire are still enemies, like they just don't care, they starting fighting for the empire which is invading their own nation and they don't care. It's not just a claude thing, they're like this regardless of the route.

You don't get stat bonuses from mastering a class, but you get their abilities.
Each class has their own growth rates and advanced and master classes can be similar or downright better (e.g. assassin has 30 30 in dex speed, while trickster has 25 35. Wyvern rider has 25 25 in hp and str, while Wyven lord has 30 30)

I ran out of Awakening near the end after taking down Edelgard and Claude and had to kill Dimitri without, which was a pain since even Shez at 120 with a Dark Creator Sword +60 was doing very little damage. Shadowblade and Dark Spikes were a godsend.

Are the rewards from Cycles of Nostalgia worth it? I’m playing Scarlet Blaze and was planning to unlock the paralogue but I just saw that Edelgard can get Amyr in SB if you recruit Byleth. The events of the bad ending also sound more interesting to see that what happens in the good ending, so now I’m not sure what to do.
If you want to unlock every event and dialogue, you need to play each route twice, one recruiting Byleth, and one not. If you're not into completion, then just get the more interesting bad ending.

Quietus is a much more aggressive skill than Shez's standard, and while Shez does have shadowflash and shadowslip, Jeritza will be able to gain Counterattack well before you'll ever get the Chalice of Beginnings and constantly have Quietus available.
Dark Knight and Holy Knight can cast spells, so if you get him through Dark Bishop he can replace weak combat arts (except Frozen Lance in some instances) for powerful black magic to hard-counter other cavalry units or armor units. His special also means he will -never- take damage, so long as you're not moronic.
actually pressing ZR is almost never worth it. the endlag is horrible and it can't cancel into dodges, arts, critical rush, it's such a pain. and the damage bonus was unnoticeable plus the description doesn't even make it clear if you get the damage bonus when the scythe is charged or when it's uncharged. i still used jeritza and he was my second level 120 with str capped and a max mt weapon with an optimized pair of combat arts, but i never felt quietus was a part of that

Take him through his magic classes, Cavalier line, and Mortal Savant line, with a slight detour into Wyvern Rider. Congratulations, beyond skills like weapon prowesses and Critical Boost, you now also have skills like Big Game Hunter, Dual Onslaught, Wild Abandon, Essence of Fire, and Proficient Witstrike to take advantage of, as well as Apex Lance when you're in the Dark Knight master class, and you could even put Swordbreaker for potentially more Triangle Advantage or domming sword units even more. Other skills that can be considered are Lethality, Provoke, Mercenary's Ploy, Knight's Wisdom, Warrior's Wisdom, Dark Mage's Wisdom, Mage's Wisdom, etc. depending on needs and class.
Helps that his unique action is just super useful no matter which class line you take him through.

So yeah, stopping the Empire is better for Hopes Claude's plans than just having an indefinite war that the Empire will never give up on.

Do the characters have to actually be in my camp to be able to increase their support levels? For example can I still increase support and read the conversations of scarlet blaze characters if I'm on a golden deer new game plus run or do I have to still be in the scarlet blaze
Depends on various factors, but characters have to have been recruited into your faction's army at the time before support conversations can be done in pretty much all cases.
If a character doesn't have Support Conversations with another character, you can just increase those Support Convos in the Auxilliary/Free Mode battles.

Interesting map about crests, aside from dominic almost the entire western kingdom doesn't have them, so much for "all rulers must have crests", it's more of an empire thing really

Crest issues exist throughout the continent.
Empire has a lot of crest bearing nobles which causes elitism but the Kingdom/Alliance have relics and that causes a huge disparity between the haves and have nots.
