I've only played the xbox games before buying LE, just about halfway through ME2 at this point. I haven't seen any issues with it so far, there was one single time where a bug made me save and reload, but otherwise fine.
the only bug i had in the LE version was when i finished the battle of omega dlc. at the end of it i somehow went in the wrong direction and fell through the map

The right thing to do would be to not recruit him in 1, that way you don't have to kill him and can still sabotage the genophage. By killing him in 1 you're exploiting him and then betraying him when he's inconvenient

Not really comparable. ME1 has always been a well received game, the only debate is if the series improves or declines from its strong start. DaS2 on the other hand was a seperate project turned into a clearly rushed sequel to a game that didn't need it and a lot of the more intense support is from contrarians fighting against the "it sucks" narrative (which to be fair is just as reductive).

ME3 has issues beyond the ending, ranging from how it treated your ME2 crew up to how shit the Cerberus part of the story was.
