      Why?

because vanilluxe is not literally ice cream

No one cares, it would still be food type

This. In pokelore Vanillite and Vanilluxe are discovered and then people decided to make a treats that looked like them.

We don't call bears and worms food type animals despite gummy worms and gummy bears existing.

cause it's an icicle with snow on it, it's not literal ice cream.

Actually, none of those pokemon are literal food other than Alcremie and Dripplin, the rest just resemble food.

Oh yea. b***hes don't know vanilluxe line is a sort of freezerburn ice sprite.

If gamefreak DID make a food type, and had the restraint to not make vanilluxe ice/food I'd be pleasantly surprised.

I think they shouldn't though. Even if it really suits stuff like Dachsbun, it would open the door to a bunch of really stupid food Pokemon. Candy bar and lollipop mon. Baguette and burger and pizza. It'd be so stupid and all dex filler trash. The sushi one sorta worked, I'll give em that.

Also, it would lead to the same stupid edgy jokes about eating Pokemon that have always kind of plagued the series. It's already sort of a grey area in the suspension of disbelief, like, is everyone in-universe vegetarian? (Slowpoke tails and lechonk seem edible. Idk it makes me very uncomfortable)

Making delicious food mons would bring up too many glaring questions

Also, sushimon is a fishy water dragon that just looks like a slice of raw fish. If he was food type it would stop being a coincidence that it looked like sushi and it'd just be literally sushi. That's kind of really dumb and removes the layers that made it clever. That goes for most of these, more or less.

Pokemon are edible. It's well-established that humans eat them. You would have to be willfully ignorant to not have picked up on this by now.

I feel like it'd lead to less creativity. Like instead of making a grass type play off whatever food they're going for just chuck it in the Food type

Do you think chimps feel bad when they eat bush babies? Sometimes cute things are delicious.

You can try surviving on a vegan diet. Some people pull it off. Others become decrepit skeletons.
Or, you can embrace the fact that you're an animal and eat other animals like God intended.

If we get a new type it should be something that is what would be considered an actual element and wouldn't apply to any existing Pokémon, like Gravity, Nuclear (as cringe as it is), Atomic, or Radio.
