Sekiro is a pure action game with some stealth elements, Nioh 2 is an action rpg with loot grinding endgame. They're very different games but you'll get more "playtime hours" out of Nioh 2 if that's something you care about.
I enjoyed Nioh 2 more, though Sekiro is probably the more technically solid game. I'm also not very good at vidya, so it took me so long to learn and beat each boss in Sekiro, it just became frustrating.
Both are great games. Nioh 2 has a much more developed combat system, more playstyles and is significantly longer.
Sekiro is much simpler in the gameplay, but still very satisfying, has better bosses, environments and story. It's farily short though.
Personally I like Sekiro more, but they're both fun, and it's up to you depending on what do you like in games.
I greatly enjoyed Nioh 1 and especially 2 but thought Sekiro was too difficult to get the hang of personally. A lot of people think Nioh 2 is more difficult. ymmv
Koei Tecmo didn't put Nioh on sale so frick em. Get the Ninja Gaiden Trilogy on game pass and play on easy preferably and you can get the Nioh experience.

Get Sekiro: Shadows Die Twice (capitalized out of respect) instead of Nioh, which is essentially shovelware
