All right. Here goes.
1) AI is completely braindead. It barely responds to the player. It's possible for a boss to fall off the arena and deprive you of a challenge if you get bad RNG.
2) Ubiquitous i-frames on all canned animation attacks. This, combined with the first point, makes the game way too easy to circlestrafe through.
3) Very poor performance on its native platforms.
4) Inadequate performance on PC, on top of not having graphics options in 20-fricking-11. A feature that had been the absolute base standard for 20 years before it.
5) Consistent mapping errors resulting in consistent performance drops in set places on the map.
6) Sound engine was broken at release, not playing ambient sound on any setup other than 5.1/downmixed 5.1.
7) Storytelling is laconic and lacklustre. Flavour text, other than being short and flavourless, is presented in an immersion-breaking manner.
8) Visuals are muddy on native platforms, passable on PC when modded.
9) These are exclusively multiplayer complaints. GFWL is (was?) an unreliable platform. There is no anti-cheat whatsoever. Some multiplayer functions barely, well, function (gravelording, for example).
10) Purely subjectively, ranged combat is either simplistic (magic) or borderine unplayable due to the botched HUD (archery).
I now await a reasonable response before I list my top 10 games.

I completely agree with your points, and would add to it that 4-directional rolling is absolute cancer, and that the game was literally unfinished, with the lost izilith just being a bunch of enemies dragged and dropped in place. Shit sucked.
That said, I still think if has one of the best world designs in any game-- bloodborne challenges that though, but that game has its own set of issues too.
Visually and aesthetically, I'd be inclined to agree. It's a little bit marred by it being unmarried to the gameplay, though. "Valley of Drakes" for example, while a cool-sounding locale, is in reality just one long, narrow tunnel. Anor Londo looks impressive, but you don't get to explore a fraction of it, and are instead funnelled down narrow walkways and corridors. Duke's Archives, again, looks great, but functionally it's a series of gangways and staircases. It's very disappointing in that regard.
Dungeons got far more complex in DS3 and ER though.

Yeah, I don't know, it's been a while since I played. It was the closest think I could think of. Maybe monster hunter but everyone uses a bow or double swords would be a better comparison? Basically you can't lock-on, you don't magnetise to enemies (as far as I remember), and attacks go way too fast for you to plan out individual attacks.

It's a combination of a lot of things. For a lot of people they are genuinely the hardest games they've played and think that beating them is something to brag about, despite every single game being broken as frick and packed full with ways to cheese the game. The majority of people sucking ER's dick always end up revealing that their first playthrough was some stupid shit like bleed/monveil and then they wonder why people were calling the boss/encounter design dogshit, unable to understand because they literally never engaged with the game in any real way on their '''blind'''' run.
Then there's stuff like lore/story which is explicitly designed to APPEAR deep and interesting, but in reality they just regurgitate the same basic story/characters for every game, and there is barely any story told, which most events that would actually be interesting happened before the game begins. Characters mostly do nothing and just die/go insane. But some areas look nice and it's told through item descriptions so it must be deep.
I assume From games appeal to people who get filtered by actually hard genres like fighting games/real roguelikes/shmups etc but want to feel like they're hardcore. I also think it appeals to people who want to feel like they're playing an 'intelligent' game storywise, but again find those games boring in reality. It's like the ultimate midwit series.
It should be added that a lot of this is an effect of frankly really ingenious marketing campaign that hyped the series up as this super hardcore experience from day 1.

I miss the days when Ganker and other fanbases didn't feel threatened by them and instead they were just another ok game studio like XSEED.

DS2 and DS3 essentially just recycled what people liked from DeS and DS1 and added nothing unique or interesting. People liked Ornstein and Smough so now half the bosses have to be large armored knights. Blighttown was memorable so let's throw in like 3 separate swamp locations. Remember patches guys? Etc. I feel like DeS and DS1 resonated with so many people on launch because it was something so new and interesting.
So they took feedback about what people liked about the games and each time tried to improve the game based on it, I never really thought that could be a bad thing during my first playthrough until people started meeting about it online. There was plenty of boss variance and the games changed each time to anticipate what players came to expect from enemies and their attack patterns to subvert those expectations and give you a new style of combat to learn and adjust to. Dark Souls 1 was incredibly intuitive, with slower enemies and careful combat based around proper dodge timing and stamina management to block attacks and counterattack. 3 shifted that to be less intuitive, with monstrous enemy designs that lent themselves to more erratic and unpredictable attack patterns, with unnatural changes in swing speed that felt wild and destructive. The same elements of timing and resource management stayed, but a new layer of intent observation was added where you would have to learn and anticipate the enemy's fake-outs and react quickly to dodge attacks without acting too soon. Elden ring compounded on this by increasing windups even further and adding punishes to the end of enemy combos to punish flowchart gameplay of (dodge enemy combo->punish combo), lending itself much more to attacks that are weaved in mid-combo during long windups that are meant to scare the player and psyche them out. Each game has a different focus on what you as a player are learning while playing it.

I think I'm one of the few who prefers 3 over all of them. Didn't like Bloodborne, Sekiro, 2, nor Elden Ring and went in blind. 1 was tolerable but it started to fall off in the second half so meh. Overrated studio but not as bad as other Japanese ones today.
the problem with souls hate is that there are plenty of valid complaints about the game, but no more and no severe than any other game people hold in high regard. No one acts like stalker doesn't have bugs, they just enjoy the game for its strengths and accept its flaws. Flaws just don't make a game bad, a lack of strengths does, and unflawed games that appeal to everyone are just 7/10 bland garbage at best.

Elden Ring exposed how bad fromdrones are and how bad the game plays. Nobody really talked about fromslop until Elden Ring. It was only well received because it has zero competition in a market full of movie games. It's the first and last popular Fromsoft game.
