On Normal difficulty you see only half of the ending, beating Hard gets you full one.
Same with Turtles in Time on SNES.
Musashi no Ken on Famicom requires you to beat game twice in a row, with second loop being harder than first. You'll only get the ending screen after that.
Legend of Kage does that too, but you need to finish 4 or 5 loops.
Sparkster on SNES unlocks Super Hard when you beat regular Hard mode, and if you beat Super Hard, it would unlock Crazy Hard mode with true final boss and ending. Rocket Knight prequels on Genesis may have something like that too, but I didn't beat it so I don't know.
Ninja Gaiden Black has different and much more complex enemies in the higher difficulties.
Shmups such as Vasara 2 and DoDonPachi hide their true final bosses behind the second loop.
In Contra 3 the final boss has an additional final form in the hard mode.

I play it on Normal because it's default difficulty, ergo normally game is intended to be played that way.
If it's too easy for me, it just means the game doesn't push too hard on player or I am just too good at it.

Play on Normal. If there's perks for the difficulty change, like better drops or unlockables, I'll play on the Hard mode.
