Humans don't do it uniformly at all, the different factions and kingdoms all have different laws and codes. Humans are always under the "Any alignment" tag so this is consistent, the difference is all Githyanki organize as a faction to engage in slavery and piracy. And if you practice slavery then the tabtletop systems will label you as evil.
High Elves (or whatever name they use in the edition) and Wood Elves don't have an codified slaving or piracy, neither do dwarves. Hobbits (halflings) don't do this, neither do gnomes for the most part though they are more all over the place.
Really, usually only your evil races practice this on a universal basis, so your Drow, Githyanki, Fire Giants, stuff like that.

There are two different sects of Gith. Githzerai are usually lawful neutral. They are often monks or monk like, zen and such.
Githyanki tend toward lawful evil. They organize their society to dominate others and engage in fun things like interstellar slave trade.
Renegade Githyanki are chaotic evil.
Githyanki have never been anything but evil. This is consistent across editions up to 5th.

That's a weird question. Roleplaying is roleplaying. Some games are more interesting for having characters with a set identify where you work within their limitations. It's just a different style of doing things.

I'd say most people diferentiates evil (butthole) and true evil (destructive force).
Vegeta is the former, he's at a point he doesn't like other people nor is kind to them but does not actively seek their demise. He might desire so, but the idea of Bulma or others getting mad is enough to stop him. You might say this still makes him evil because he does wish to destroy others for petty reasons , but it's this though process where he stops himself or with little itnervention that show his changes.
But yeah as far as "main characters" go he's one of the evilest and most buttholes played staright.
I'm not saying he doesn't have redeeming qualities, he does, but I did just get done with his Boo segment which is a very mixed bag. In the end he sacrifices himself, but the entire segment before that is purposefully murdering people and trying to prove his strength for purely evil reasons. Evil with understandable human qualities, even likable, is still evil.
Imma say that at the end of the day, it is stupid to try to find some proper cohesion in Dragon ball because it's, well, dragon ball. Toriyama didn't aprticularly excel at writting.

You can play any of the main companions, including Lae'zel, as the player character. You don't even make a custom character at that point. There's also an option for a defined background, but customizable appearance, character you can choose.
