In BG1, you either load a savegame when a character dies or accept the death and keep playing until you find a replacement character - or until you can afford a ressurection at a temple or via spell.
This. BG1 is chock full of expendable meat shields because they know that characters are squishy in low level D&D and resurrections are expensive. Wizards especially with their beginning 1-4 hp and weak defenses

The canon game party pf BG1 is Charname, Imoen, Jaheira, Khalid, Minsc and Dynaheir (the typical good-aligned party), but the question was about the lore canon party and sorry to say it but the shitty books are canon as far as WoTC were concerned.
They may have changed it after the backlash but at the time when the question was originally posed to them about whether the games or books were canon, they said it was the books, because the games weren't set. You could take anyone with you. The party you start with in BG2 is what it is because they needed someone there to join up with you, and iirc it isn't the same group that came with the Tales of the Sword Coast expansion where the main guy was named Abdel Adrian.
The books aren't canon, all the characters are "canon" as in "they traveled with charname for a while"
The only actual 100% canon BG2 party is Minsc, Jaheira and Imoen
saying baldurs gate has characters is very generous, they're more like named goons that approach you randomly and joins your party because you need a party to complete the game and you're probably not playing through it with 5 friends

There's plenty of mods now to remove the terrible Beamdog content and restore the original soul elements, and it runs better on modern machines.

Canon group is Abdel Adrian, Imoen, Jaheira, Viconia, Xan and the charmed Ghoul you can pick up in the basilisk area east of Beregost, iirc

Because the guy who wrote the books was a hack. Minsc wasn't even in the novel of BG1. And he was a skinny redheaded nobody in the BG2 novel.

If your characters in BG1/BG2 get gibbed (explode in to chunks because of a critical hit) you cannot revive them. They are permadead.
