Extremely extremely combat heavy. You'll get sick of gameplay and battle micro management that you'll be asking us what's a plot & cutscenes oriented one next
Pathfinder games are some of the richest games in terms of build variety if thads what you were looking for when you said customisation
They also offer the best role playing experience within a pre written narrative in all gaming. I think. (Keep in mind that I said WITHIN A PRE WRITTEN NARRATIVE, I already see homosexuals typing how that's not true role playing, it's a matter of preference between that and something like Wizardry or Morrowind. I know.)
You could also try Gothic for its really good immersion and worldbuilding with decent combat. (I liked it actually)

eraMegaten is great if you're a fan of smt, you can be a standard devil summoner, persona user, avatar tuner, even an unlockable DMC-Devil Hybrid, among some other options. It's got questlines based on most every game in the series, bar some of the more recent, but it even includes very obscure shit like the TRPGs and some optional crossover stuff like fate and rabi-ribi. It's all text based, but it still plays exactly like a top down SMT game, don't let that part fool you into thinking its incredibly dated. You can also frick every single demon and recruitable character, which may be half of the game but if you really want to you can ignore most of that content and play it like a normal Megaten game, The only drawback is macca is a bit harder to get and you cant get specific endings, but you can always get them in later runs/cycles with NG+ so you can do them whenever you want

>easy to re-spec if you didn't like your experiment, easy to add custom chars if you dislike companions
>great difficulty options to keep things challenging enough
Pathfinder games seem like something to be recommended here, but I would warn against it, at least not as a first pick.

my experince with arpgs is from really fun to just grunt work, like a straight line of enjoyment going from the top to the bottom.
played em all, pathfinder is nauseating,
again, my psymonk got filtered in underrail, might try to get past the depot again.
