i think it's a very easy game to get some enjoyment out of for the first 20 hours or so, which is why it's so successful.
I played like 25 hours over 3 days and have no inclination to play anymore. I don't regret it, I had a really good time (multiplayer) for the first 18ish hours and then i started to get bored.
Hopefully Palworld 2 or whoever else makes their own copycat touches up a lot of the more lacking parts, currently it feels like the most basic framework of some ideas that when really fleshed out and polished up will end up a phenomenal game. I know it's only early access but I don't think Palworld will be that game even after its' full release.

overall...AI or not it's not easy to make compelling monsters for a monster catching game. I personally think it was not "thought of before", not because it wasn't, but simply because it's damn nigh impossible to compete with the market leaders of monster catching.
Even pokemon can't compete with their old designs anymore, who knows if they're even trying. It's not that easy of a task. For a westerner even, who does not think of monster catching game a mainstream concept they can easily compete (west is not good with cuteness or the design philosophy that goes into games like this)
