If YHVH is supposed to be omnipotent then He could just make Good without Evil and facilitate free will without Evil. But He doesn't.

Yes, but it is known that God will use Evil to create an even greater good. He made this world for us. He made humans to be lesser than Himself, but still capable of Good and Evil. Again, you're questioning the intent of an omniscient God. Quite literally, you and I cannot understand the knowledge and intent behind all this. We only understand it through our limited, sinful, tainted world view, so it's understandable why you would think such an action is "evil." But the reality is that in the beginning, we WERE in what was essentially Heaven (the Garden of Eden), and we chose to frick that up.

If we want to get into the act of assuming the nature of a being far beyond any of us, and engaging in a topic that has formed entire sects of Christianity based on the answer, then what we can safely assume based on what we know is that God can purposefully limit Himself to only experience certain things. We saw this once with Jesus Christ, who was God limiting Himself to a human body. If He can do that, then surely he can purposefully ignore and choose to remain without knowledge on our future. Which is pointless, because he is the very embodiment and concept of perfection and goodness. He can choose to not see what our future is because he can do that, and he does that because that is the perfect option. And if he suddenly chose not to do that, then once again, that is the perfect sequence of events. If you're going to hold God to the human logic of "If he can do anything, can he make or do something that he can't handle?" then you have to follow that to the logical conclusion of, Yes, he can, and he can also choose not do it, because he can literally do anything to a perfect level, so the only (ultimately pointless) pursuit of the answer to "Well then why" is because He is perfect and that was the perfect choice in any given moment.
