The reason Doom and all the rest of the DOS brown shadow games look like that is because they were emulating shading in the confines of a fixed color pallete. In practise you only had 8-16 unique colors for your assets and the rest had to be dedicated ramps for the lighting, which of course is completely alien to modern shading where you can do whatever you want whenever you want.
