It serves as a litmus test for whether a church actually follows the Bible. The trinity is explicitly 3 in 1 so when a denomination says something else it means they don't hold a high view of scripture and make up whatever they want.
The exact nature of the trinity isn't a giant deal as far as someone's faith goes but it helps sort out orthodoxy from heresy.

Multiple times in scripture the triune nature of God-Son-Holy Spirit are explicitly laid out. Without going into the dense theology about how the relationships between the trinity are a type of what our relationships should emulate, suffice to say that it's been laid out plainly to be the case that God is one entity compromised of three distinct persons.
All the way back to the church's infancy there were heresies with relation to the trinity that led to other aberrant doctrines. The gnostics come to mind but weren't the only ones.
The trinity is one of the hardest parts to grasp about the bible and also has the most mystery attached to it (not whether it exists but the nature of that existence.) If an aberrant teacher is going to go off into the weeds that's a typical starting point. They claim they have cracked the code and truly understand some part of scripture that everyone else has wrong, then build doctrine from there until you have Jehova's witnesses or mormons.
Gnosticism is certainly present in the bible due to the Logos mention in the opening of John. One could argue that the notion of a soul and an afterlife came to the israelites only because of Hellenization which would have introduced the israelites to Plato and his Logos concepts.

To your point, some churches have icons of the Greek philosophers on their walls. Not to commemorate them as saints, but to honor them as truth seekers.
