How come one handed axes rarely drop? Playing this game for the first time and I went with a duel wielding axe barbarian and I've been stuck with the same two axes from level 6 (I'm at level 26 now)

D2 drops are a complex matter. You should check the blacksmith when new axes start showing up in their inventory.

Without mods melee is pretty terrible. It has practically no AOE, has a huge reliance on attack rating and good weapons for damage and the melee mechanics in the game are a bit buggy which can cause unnecessary misses which can be particularly bad on top of the harsh attack rating requirements to hit consistently.
Mods such as Project Diablo 2 fix a lot of the bugs and add something called "melee splash" which makes melee attacks hit monsters around the one you hit. Though mods also add quite a bit of complexity so they might not be the best thing to play for someone new to the game.
If you find 2 or 3 socket axes that have a gray name (so they're not magic, rare or unique) you can try runewords such as Steel, Malice or Strength. Malice is particularly nice for the -defense on target and Strength has Crushing Blow which helps in killing bosses.

it's only fine to play casually just to beat normal difficulty. Actually normal difficulty does't really offer any good drops. You can complete the game on normal just with items from the vendors.

Melee is totally fine for normal. The harder difficulties just make all the numbers bigger and require much better gear, and obtaining that gear can be boring if you don't like farming.
You can get yellows from gambling. Should be a good way to upgrade the axes every few levels if you don't get good drops.
Don't worry about any of that min-max or meta shit then. It doesn't apply to normal mode. As you can see asking veterans for any tips will get you either very vague answers or straight out wrong ones because they're thinking only of hell difficulty. Like runewords - they are fricking useless on normal for two basic reasons: you can complete the game easily with vendoer items and the game will be over before you even manage to collect runes for any useful runewords. Most of the low level runewords suck ass and are not worth wasting time on griding. You should instead use runes for bonus resistances or damage, not worrying about making words out of them.

How the frick do people struggle with Duriel? I beat this fricker on a necromancer using a fricking crossbow (I was moronic don't ask) on all 3 difficulties my first time through the game for fricks sake. I didn't even die once against him.

Don't listen to newbs like this that never played Diablo 1. Melee is fast as frick compared to original Diablo. You don't need modded half second screen clears like PoE.
Gamble axes and hope that you get a good yellow rare one. I think you have a 1/10 chance for a gambled axe to be a rare. That's how you get through normal as a barb rather smoothly (or how I always do during ladder resets).

D1 combat is a million times faster at low levels. In D1, you kill everything in a few seconds because your damage largely scales based on Strength. In D2, you take a minute to kill anything because your damage largely scales off weapons you don't have (the damage you need to kill things in melee in D2 is balanced around the assumption that you have like a 300%+ ED weapon) . Everything in D1 is lethal, everything in D2 is a meatsponge.
It doesn't take a minute to kill mobs in Diablo 2 normal mode as melee. You've don't know what you're talking about. D1 nightmare and hell is ridiculously unfair in comparison.

D2 melee is still way faster than D1 melee in normal mode. You get abilities that attack multiple mobs like whirlwind, double swing, zeal, etc. In D1, you just click a single mob and chase ranged mobs all over the map. I don't think you morons have played either game at this point.

I have little experience but from what I can tell, Bard starts off quite strong but scales much, much worse than other classes. Maybe it's different for other melee classes, Paladin should be far stronger but I personally enjoyed Javazon the most
You just need to farm runes for an oath as melee. It's not that bad and will probably take you 8 hours or so to do. Newbies make it seems like melee is impossible to play through the game with due to a lack of knowledge.

Barbarian is extremely depended on good gear, if you don't get lucky with drops or trade with others on batttlenet, you're going to have a very hard time, especially on hell difficulty.
Casters like sorceress or necromancer can get away with shit items because they mostly scale with spell upgrades. If you want to play melee as first character then go for paladin, even if you are not lucky with items, auras will carry as they do magic damage and have ridiculous scaling along with other skills. Then you can either go Zealot with fanatism/lighting/cold aura or hammerdin which is pretty much the easiest build to go for hell.
Barbarian is ironically the hardest class to play so you picked the worst option. Not that he is bad, but others have significant advantage over him on early-mid game. You might try to find better weapon with grinding or search shops, but paladin will be much easier for you.

Short Answer: Different items will drop based on level.
Long Answer: All items have an item level, and it is derived from what dropped it (area and difficulty). As you level up / gain access to new areas you will see different types of equipment drop. Early game drops are fairly uniform so you won't see a lot of variety until after level 30.
To add to this - gamble on War Axes on npc vendors. War Axes are the best 1h axe for Barbarian for normal mode (fastest speed, longest reach).
Just use a hero editor if you're playing solo. I played solo LoD with PlugY a while ago and I wanted enigma. I had the runes but not the mage plate so I just cheated to get the item. Remember that Diablo 2 loot is balanced around multiplayer trading, you're not supposed to farm the same chests or bosses over and over for thousands of times, leave that to the autists. I recommend this for hell though, it's not worth to cheat in normal/nightmare cus the loot is ass anyway.

You basically need to use runes to craft an axe, or buy from vendors or get super lucky that the unique item drop you get is an axe

Kill everything that moves (and some of the things that don't) and you'll get drops in normal and early nightmare, it's easy. Getting viable weapons after that gets increasingly harder, even more so for melee builds.
